Chef Maeve's Blueberry Cheesecake Recipe

Ingredients for Crust

· 2 1/3 Cups ground ginger snaps

· ½ Cup melted salted butter

· ¼ Cup sugar

Ingredients for Filling

· 32oz room temp cream cheese

· 1 ½ Cup sugar

· 5 large eggs

· 16oz Sour Cream

· ¼ Cup half & half

· 1 tbsp Vanilla extract

· ¼ All-purpose flour

· ½ Cup blueberry jam

 

Ingredients for Topping

· 1 Cup fresh blueberries

· ½ Cup sugar

· 1 Tbsp Maple syrup

 

Preparation

1. Mix all crust ingredients in mixer

2. When ball forms stop

3. Press dough into base of springform in mixer

4. Beat cream cheese, sugar, eggs together

5. Then add in flour, sour cream, half & half, vanilla – combine well

6. Pour on top of ginger crust

7. Swirl in blueberry jam

8. Bake at 375 degrees for 1 hour and then turn off oven and leave cheesecake in for an additional 45 minutes to set

9. Chill for 4 hours

10. Mix tipping ingredients all together and place in center of cheesecake
